Roasted Veggie Creamy Pasta

I loosely followed this recipe. If you follow my blog you will know by now that I don’t really follow recipes. So let’s say this was inspired by this recipe. Even the protein version I made for my husband didn’t quite follow this. (If you’re curious, for his I just added mozzarella cheese)

My creamy roasted veggie pasta

I roasted the veggies in the oven like it says. Next time I would sprinkle salt on it. Pre-heat to 400 degrees. Cover baking sheet with foil. Place chopped veggies on pan and drizzle olive oil over them. Cook for about 20 minutes.


I made a sauce with garlic, marinara, and alfredo. Started by sautéing the garlic for a minute then added the sauces. It was orange colored and creamy and yummy. A little bit of Alfredo sauce doesn’t have much protein in it.

Ingredients for my sauce. (Barilla Tomato Basil is my favorite marinara sauce)

It turned out pretty yummy!
