Last week my sister Marianne and her cute little family came to visit for my daughter Elena’s fourth birthday. It was so nice to see them! I have mostly lived away from family during my marriage, and now my sister is a 3 hour drive away. Yay! Many more get-togethers to come.
One night for dinner we had an indoor BBQ or sorts by grilling burgers on our griddle. I also made some veggie kababs with the help of my brother-in-law Craig who is an awesome cook. They turned out great so I wanted to share in case anyone needs an idea for the Fourth of July holiday this week.
As always, I am estimating on the recipe here. But basically it was
Orange bell pepper
Southern Spain Pinchito spice
This is a delicious spice my best friend Kylie gave me for my birthday last year. One of the main components is curry powder, so you could try that if you don’t have something like this.
Pre-heat the oven to 425
I cut up the vegetables, and at the suggestion of Craig, and because I hadn’t marinated them, we put them in a bowl and mixed them with the oil and spices, to add flavor that would stick. Then my girls helped (sort of…) me skewer them and we put them on a baking sheet.
We put then in the oven for 10 minutes, and then Craig flipped them, then cooked them for 5 more minutes. Then we turned on the broiler for just a few minutes to give them that grilled taste.

Also, really cool way to cut watermelon that makes long columns of watermelon with just a little green on the end. Learned this from Kristen, my sister-in-law on my husband’s side. Nice right?
Add a tomato avocado sandwich for a low-protein “burger”, and over all a great meal.
